  • 1 clove garlic (grated fine)
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives (or 1 tablespoon dried chives)
  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat oven to 400°F and lightly coat a baking sheet with olive oil or non-stick spray.
  2. Grate zucchini into a clean towel and twist to wring out excess moisture for crispiness.
  3. Grate garlic finely using the small holes of your box grater.
  4. In a mixing bowl, combine drained zucchini, grated garlic, egg, breadcrumbs, cheese, herbs, salt, and pepper; mix until fully combined.
  5. Shape the mixture into small balls (about one tablespoon each) and place on the prepared baking sheet.
  6. Bake for 15-18 minutes until golden brown. Serve warm with marinara sauce.
