  • 2 cups shredded zucchini
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine the drained zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix well.
  3. Preheat a cooking pan over medium heat and add canola oil.
  4. Scoop portions of the mixture into the pan and gently shape them into fritters.
  5. Fry each fritter for 4-6 minutes on each side until golden brown. Flip only once to maintain shape.
