- 2 cups shredded zucchini
- 1 cup Panko bread crumbs
- 2 eggs
- 1/3 cup grated Parmesan cheese
- 1/4 cup shredded Mozzarella cheese
- 2 garlic cloves (minced)
- Salt and pepper to taste
- 3 tbsp canola oil (for cooking)
- Grate zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheese cloth.
- In a mixing bowl, combine the drained zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix well.
- Preheat a cooking pan over medium heat and add canola oil.
- Scoop portions of the mixture into the pan and gently shape them into fritters.
- Fry each fritter for 4-6 minutes on each side until golden brown. Flip only once to maintain shape.
