  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 4 ground Oreo crumbs (for decoration)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a cupcake tray with liners.
  2. In a bowl, mix dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Add sunflower oil to the buttermilk mixture and stir well.
  5. Combine the wet and dry mixtures until just combined; do not overmix.
  6. Pour batter into liners and bake for 18–20 minutes until a toothpick comes out clean.
  7. For frosting, beat dairy-free butter and icing sugar until fluffy, then add aquafaba gradually.
  8. Frost cooled cupcakes and decorate with ground Oreo crumbs and melted dairy-free dark chocolate.
