  • 2 large eggs
  • 1/3 cup granulated sugar
  • ¾ cup packed dark brown sugar
  • 1 ½ cups all-purpose flour
  • Spices: ground cinnamon, ginger, cardamom, nutmeg, all-spice, cloves
  • 8 tablespoons salted butter (for frosting)
  • Heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, combine spices for the batter and set aside half for topping.
  3. Mix melted coconut oil, sugars, vanilla extract, eggs, and pumpkin puree until smooth.
  4. Gradually add flour, baking powder, baking soda, salt, and reserved spice blend; mix until just combined.
  5. Divide batter into cupcake liners and bake for 18–22 minutes. Cool completely.
  6. For the frosting: melt butter with cream and brown sugar; cool slightly before adding powdered sugar and remaining vanilla.
  7. Frost cooled cupcakes generously and sprinkle with reserved chai sugar.
