  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon sugar
  • 50ml single cream
  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add chopped onion and sweet potato; cook for 5-10 minutes until softened.
  2. Stir in minced garlic and ground cinnamon; cook for 1 minute until fragrant. Add torn basil leaves, canned tomatoes, and chicken stock.
  3. Bring to a boil, then reduce heat to low, cover, and let simmer for 20 minutes.
  4. Meanwhile, in a mixing bowl, combine dried breadcrumbs, baking powder, grated cheddar cheese, mustard powder, oregano, egg, and cream cheese; mix to form a stiff dough. Shape into eight balls.
  5. Blend the soup until smooth and return it to the pot. Stir in sugar along with salt and pepper to taste; add cream.
  6. Drop dumplings into simmering soup; cook without stirring for about 10 minutes until fluffy. Serve two dumplings per bowl with soup.
