  • 1/3 cup coconut milk
  • 2 teaspoons Masaman curry paste
  • 1/2 cup creamy peanut butter
  • 3/4 cup coconut milk (for sauce)
  • 2 tablespoons apple cider vinegar
  • 1/2 cucumber (sliced)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cayenne pepper
  • 1.5 tablespoons minced garlic
  • 2.5 teaspoons sweet soy sauce
  • 2.5 teaspoons sugar
  • 1/4 teaspoon white pepper
  • 2 tablespoons ground peanut
  • salt to taste

Instructions

  1. Slice chicken breast into strips and marinate with curry paste, turmeric, garlic, fish sauce, sweet soy sauce, sugar, white pepper, and coconut milk for at least 30 minutes.
  2. For the peanut sauce, combine peanut butter, coconut milk, curry paste, apple cider vinegar, sugar, and salt in a saucepan over low heat. Whisk until smooth and let simmer.
  3. Skewer the marinated chicken pieces and grill on medium-high heat for about 4 minutes per side until cooked through.
  4. Serve warm with sliced cucumber and peanut sauce for dipping.
