  • 4 skinless, boneless chicken breasts
  • 2 eggs
  • 1 tsp xanthan gum
  • ½ cup Carbalose flour
  • 3 tbsp oil
  • ¼ cup orange juice
  • 3 tbsp sugar-free orange marmalade
  • 3 tbsp rice apple vinegar
  • 2 tbsp soy sauce
  • 2 garlic cloves, minced

Instructions

  1. Cut the chicken into bite-sized pieces and mince the garlic.
  2. Set up a dredging station with whisked eggs in one bowl and a mixture of Carbalose flour and xanthan gum in another.
  3. Preheat oil in a skillet over medium-high heat. Dredge chicken pieces in egg, then coat in flour mixture.
