  • ½ cup celery, chopped
  • ½ cup onion, chopped
  • ½ cup carrots, chopped
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 2 cups bread flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp granulated sugar
  • ½ tsp salt
  • 1 ¼ cups buttermilk
  • 8 tbsp unsalted butter, melted then cooled, divided
  • 1 tsp fresh rosemary, chopped

Instructions

  1. In a food processor, pulse the celery, onion, carrots, thyme, sage, salt, and pepper until finely chopped.
  2. Sauté the vegetable mixture in olive oil over medium heat for 10–12 minutes until softened; set aside to cool.
  3. Preheat your oven to 425°F (220°C).
  4. In a large bowl, mix bread flour, baking powder, baking soda, sugar, and salt.
  5. In another bowl, whisk buttermilk and 4 tbsp melted butter; combine with the dry ingredients until a dough forms.
  6. Fold in the cooled vegetable mixture.
  7. Drop spoonfuls of dough onto a baking sheet; bake for about 12 minutes.
  8. Brush with remaining melted butter mixed with rosemary and bake for an additional 6–8 minutes until golden brown.
