  • 1 tbsp extra-virgin olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/41 lb ground beef
  • 24 oz marinara sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 32 oz ricotta cheese
  • 2 eggs
  • 1 cup cooked spinach, drained and chopped
  • 1/4 cup mozzarella cheese
  • 1/4 cup shredded Parmesan
  • 1 box jumbo shells
  • 2 cups mozzarella cheese
  • Fresh parsley, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the jumbo shells according to package instructions until al dente; drain and set aside.
  3. In a large skillet over medium heat, heat the olive oil and sauté the diced red and green bell peppers until soft.
  4. Add the ground beef and cook until browned, then stir in the marinara sauce along with garlic powder, onion powder, salt, and black pepper. Let it simmer for a few minutes before setting aside.
  5. In a mixing bowl, combine ricotta cheese, chopped spinach, eggs, and the mozzarella cheese. Mix well until all ingredients are fully incorporated.
  6. Carefully fill each cooked jumbo shell with the ricotta mixture. Arrange the stuffed shells in a single layer in a 13-inch baking dish over a layer of meat sauce.
  7. Pour any remaining meat sauce over the stuffed shells. Cover with foil and bake for 20 minutes.
  8. Remove from oven and sprinkle 2 cups of mozzarella cheese on top. Increase temperature to 375°F (190°C) and bake uncovered for another 15 minutes or until bubbly. Broil for a few minutes for a golden crust.
  9. Garnish with fresh parsley before serving warm.
