  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean the mini pumpkins thoroughly and cut off their tops. Scoop out the insides.
  3. In a skillet over medium heat, sauté diced onion and minced garlic in olive oil until fragrant.
  4. In a mixing bowl, combine the sautéed onion and garlic with ground beef, pumpkin puree, spices, and herbs.
  5. Stuff each pumpkin with the mixture and place them in a greased casserole dish.
