  • 9 ounces Spanish chorizo (sliced)
  • 1 green bell pepper (chopped)
  • 1 yellow onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 carrot (chopped)
  • 1.7 pounds waxy potatoes (cut into bite-sized pieces)
  • 6 cups chicken broth
  • ΒΎ cup heavy cream
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • ΒΌ tsp cayenne pepper
  • 2 tbsp double concentrated tomato paste
  • 2 tbsp flour
  • 2 tbsp chopped parsley

Instructions

  1. Prepare the ingredients by chopping the vegetables and slicing the chorizo.
  2. In a large pot over medium-high heat, add olive oil and cook the chorizo until browned (about 3 minutes). Add bell pepper and cook for an additional 2 minutes.
  3. Stir in onion, garlic, carrot, and spices; cook for another 2 minutes.
  4. Add tomato paste and flour; mix well before adding potatoes and chicken broth. Bring to a boil.
  5. Reduce heat to medium-low and simmer for 15 minutes or until potatoes are tender.
