  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾ inch pieces)
  • 1 bell pepper (cut into ¾ inch pieces)
  • 4 fully cooked sausages (sliced)
  • 2 ½ tbsp olive or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 tsp garlic (minced)
  • Fresh basil (for garnish)

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat.
  2. Add sliced sausage and sauté until browned. Remove from skillet.
  3. In the same skillet, add remaining oil and sauté zucchini, onion, and bell pepper along with seasonings until tender.
  4. Return sausage to the skillet with minced garlic; combine well and cover for a few minutes to meld flavors.
  5. Taste and adjust seasoning before serving.
