1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 ripe avocado
1/4 red onion, finely chopped
2 tablespoons chopped cilantro
1 jalapeño, seeded and minced (optional)
1 lime, juiced
Salt to taste
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped parsley
1 tablespoon lemon juice
1 clove garlic, minced
1 cup cooked rice
Lime wedges, for serving
Fresh cilantro, for garnish
Instructions
In a bowl, combine the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if you're using it. Toss everything together until the shrimp are well-coated.
Preheat your grill or grill pan over medium heat. Grill the shrimp for about 2-3 minutes per side, or until they turn pink and are fully cooked through.
In a small bowl, mash the ripe avocado with a fork until smooth. Stir in the finely chopped red onion, cilantro, jalapeño (if using), lime juice, and add salt to taste.
In another small bowl, whisk together mayonnaise, sour cream, chopped parsley, lemon juice, minced garlic, salt, and black pepper until smooth.
Divide cooked rice between serving bowls. Top each bowl with grilled shrimp and generous spoonfuls of guacamole. Drizzle with creamy sauce and garnish with lime wedges and fresh cilantro.
