  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz cream cheese (softened)
  • 1/2 cup powdered sugar

Instructions

  1. Soak pineapple rings in dark and coconut rum for at least 1 hour. Drain and pat dry.
  2. Set up three shallow dishes: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Coat each pineapple ring in flour, then dip into egg mixture, and finally coat with coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry pineapple rings in batches for about 1 minute per side until golden brown; drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese and powdered sugar until smooth; stir in reserved rum to reach desired consistency.
