  • 15 oz can black beans (rinsed and drained)
  • 1 small red onion (chopped)
  • 3 tablespoons lime juice

  • ¼ teaspoon black pepper
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground paprika
  • 1 teaspoon minced garlic

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Peel and slice sweet potatoes into ½" thick disks; cut each disk into smaller pieces.
  3. Toss sweet potato pieces with olive oil, salt, black pepper, and ground cumin.
  4. Spread on the baking sheet and roast for 20-23 minutes until tender.
  5. In a large bowl, combine cooked quinoa, black beans, chopped red onion, and roasted sweet potatoes.
