  • 3 cups finely chopped red bell pepper
  • 1 cup finely chopped green bell pepper
  • 1/4 cup finely chopped jalapeño pepper
  • 1 cup apple cider vinegar
  • 1 1/2 packages SURE-JELL powder pectin
  • 5 cups white sugar

Instructions

  1. Sterilize six 8-ounce canning jars and lids according to the manufacturer's instructions.
  2. In a large saucepan over high heat, combine red bell peppers, green bell peppers, jalapeño peppers, apple cider vinegar, and Sure-Jell pectin. Bring to a rolling boil while stirring constantly. Quickly add sugar and return to a rolling boil for 2-3 minutes. Remove from heat and skim off foam.
  3. Ladle the jelly into the prepared jars, filling each to 1/4 inch from the top. Secure the lids tightly.
  4. Process the jars in a hot water canner for five minutes before removing them to cool completely.
