  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with a pinch of salt and pepper for 3–4 minutes until softened.
  3. Add minced garlic and Italian seasoning; sauté for 30 seconds before stirring in tomato paste for another minute.
  4. Crumble Italian sausage into the pot, cooking until browned.
  5. Stir in chicken broth, crushed tomatoes, ravioli, and season with salt and pepper.
  6. Bring to a simmer; reduce heat to low and cook for 3–5 minutes until ravioli are al dente.
  7. Mix in fresh spinach and heavy cream; cook until spinach wilts.
  8. Taste and adjust seasoning if necessary. Garnish with shaved Parmesan and parsley before serving.
