  • 1 cup unsalted butter (melted)
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well mixed to form the crumble.
  3. Press half of the crumble mixture into the bottom of the prepared baking dish to create a base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle remaining crumble on top; add chopped walnuts if desired.
  7. Bake for 30-35 minutes until golden brown and set.
  8. Allow to cool completely before slicing into squares.
