  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, beat together unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add pumpkin puree, egg, and vanilla extract; mix well.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Scoop heaping tablespoons of dough onto the prepared baking sheet.
