  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 (8 oz) cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Combine walnuts, almond flour, sugar, and melted butter in a bowl to form the crust; press evenly into the baking dish.
  3. Blend cream cheese and sugar until smooth. Add eggs one at a time, mixing thoroughly after each addition; reserve part of this mixture.
  4. Stir pumpkin puree and spices into the remaining cream cheese mixture. Layer over the crust.
  5. Prepare streusel by combining sugars, oats, flour, softened butter, and vanilla; sprinkle over the cheesecake layers.
  6. Bake for 60–70 minutes until set in the center. Cool before chilling for at least two hours.
  7. Cut into squares and serve!
