  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour

  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 8 oz cream cheese (softened)
  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine vegetable oil, sugar, eggs, pumpkin puree, and vanilla extract until well blended.
  3. In another bowl, sift together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually add to the wet ingredients and stir until just combined.
  4. In a separate bowl, beat together softened cream cheese with white sugar and vanilla extract until smooth.
  5. Prepare the streusel by combining light brown sugar, white sugar, butter (softened), flour, and spices until crumbly.
  6. Grease a baking pan and layer half of the pumpkin batter followed by the cream cheese mixture and top with remaining batter and streusel.
  7. Bake for about 45 minutes or until a toothpick inserted in the center comes out clean.
