  • pounds beef tenderloin (trimmed)
  • Coarse salt and freshly ground black pepper (to taste)
  • 2 tablespoons pineapple juice
  • 1 teaspoon soy sauce
  • 4 slices fresh pineapple

Instructions

  1. In a mixing bowl, combine hoisin sauce, grated ginger, minced garlic, and Dijon mustard to create the marinade.
  2. Rub the marinade over the trimmed beef tenderloin and season with salt and pepper. Cover and refrigerate for at least 15 minutes.
  3. Preheat your broiler. Place pineapple slices on a lined baking sheet and broil until caramelized, about 5-7 minutes per side.
  4. Broil the marinated tenderloin for about 10-12 minutes per side or until desired doneness is reached.
  5. In a small saucepan, mix hoisin sauce, pineapple juice, grated ginger, soy sauce, salt, and pepper. Simmer until slightly thickened.
