  • 2 pears, (sliced or chopped)
  • 3/4 English cucumber, (chopped)
  • 1 small red bell pepper, (chopped)
  • 1/4 red onion, (thinly sliced)
  • 1/2 cup roasted and salted pepitas
  • 1/2 cup pomegranate seeds
  • 1/2 cup crumbled feta or goat cheese
  • 1 recipe caramelized nuts (walnuts or pistachios)
  • 1 5.3 oz. container Pomegranate Greek Yogurt
  • 3 tablespoons Asian Sweet Chili Sauce
  • 3 tablespoons pomegranate juice
  • 2 tablespoons mayonnaise
  • 12 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon poppy seeds (optional)
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, whisk together Pomegranate Greek yogurt, Asian sweet chili sauce, pomegranate juice, mayonnaise, apple cider vinegar, lemon juice, poppy seeds (if using), and salt until smooth. Chill in the refrigerator.
  2. In a large mixing bowl, combine spring salad mix, sliced pears, cucumber, bell pepper, red onion, pepitas, pomegranate seeds, cheese, and caramelized nuts.
  3. Drizzle desired amount of chilled dressing over the salad just before serving and toss gently to coat.
