  • 2½ cups crushed pretzels
  • ¾ cup granulated sugar
  • ¾ cup melted butter
  • 12 ounces cream cheese
  • 2 teaspoons vanilla extract
  • 12 ounces Cool Whip
  • 6 ounces peach vegan gelatin
  • 4 cups fresh peaches (peeled and diced)
  • 2 cups boiling water
  • 2 cups ice water

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking pan.
  2. In a bowl, mix crushed pretzels, ¾ cup sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool completely.
  3. Beat together cream cheese, remaining sugar, and vanilla until smooth. Fold in Cool Whip and spread over cooled pretzel crust.
  4. Dissolve peach gelatin in boiling water, then stir in ice water. Mix in diced peaches and let thicken slightly.
  5. Pour the jello mixture over the cream cheese layer. Cover and refrigerate for at least two hours until set.
