  • 1 cup fresh or canned peaches (diced)
  • For the frosting: ½ cup unsalted butter, 1 cup packed brown sugar, ¼ cup milk, 2 cups powdered sugar, ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter with granulated sugar until light. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
  4. Gradually combine dry ingredients with wet ingredients until just mixed; gently fold in diced peaches.
  5. Pour batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean. Cool on a wire rack.
  6. For frosting, melt butter in a saucepan over medium heat; stir in brown sugar and cook for about 2-3 minutes. Add milk and bring to a boil before removing from heat. Once cooled slightly, whisk in powdered sugar until smooth.
  7. Frost the cooled cake with brown sugar frosting.
