  • 8 oz cream cheese (for each ice cream layer)
  • 1/2 cup sugar (for strawberry layer)
  • 2 tbsp milk (for strawberry layer)
  • 4 tsp strawberry extract
  • 8 oz Cool Whip (or homemade whipped cream)
  • about 20 drops red food coloring
  • 1/2 cup sugar (for vanilla layer)
  • 2 tbsp milk (for vanilla layer)
  • 2 tsp vanilla bean paste
  • 2 tsp vanilla extract
  • 8 oz Cool Whip (or homemade whipped cream for vanilla layer)
  • 3/4 cup heavy whipping cream, cold
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix flour, sugar, cocoa powder, and baking soda in a bowl. Add egg, buttermilk, vegetable oil, and vanilla extract; mix until smooth. Stir in boiling water.
  3. Pour batter into greased pans and bake for 25–30 minutes until a toothpick comes out clean. Cool completely.
  4. Prepare the strawberry layer by mixing cream cheese with sugar, milk, and strawberry extract; fold in half of the Cool Whip.
  5. Spread the strawberry mixture on one cake layer and top with another layer.
  6. For the vanilla layer, repeat using cream cheese, sugar, milk, vanilla bean paste, and remaining Cool Whip.
  7. Spread the vanilla mixture on top of the second cake layer.
  8. Make whipped topping by beating heavy cream with powdered sugar and vanilla until stiff peaks form; spread over the cake.
  9. Chill before serving.
