  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti in boiling salted water until al dente; drain.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and smoked paprika, then cook for 6-7 minutes per side until fully cooked. Remove from skillet, slice, and set aside.
  3. In the same skillet, melt butter and sauté onions and garlic until softened.
  4. Add chicken broth; bring to a simmer. Stir in heavy cream and let cook for about 2 minutes.
  5. Reduce heat to low and mix in Monterey Jack and Parmesan cheeses until melted.
  6. Add cooked spaghetti to the sauce; toss to coat.
  7. Top with sliced chicken and garnish with parsley before serving.
