  • 2 large eggs
  • 2 large egg whites
  • 2½ teaspoons pure vanilla extract

  • ⅔ cup sour cream
  • ¾ cup milk (preferably whole or 2%, at room temperature)
  • 3 cups fresh strawberries (sliced or diced, divided)
  • 2 tablespoons strawberry jam
  • 8 ounces cream cheese (softened to cool room temperature)
  • 1 cup powdered sugar
  • ¾ teaspoon vanilla extract
  • 2¼ cups heavy whipping cream (very cold)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In one bowl, mix flour, baking powder, and salt. In another bowl, blend sugar with oil, then add eggs, egg whites, and vanilla.
  3. Gradually combine wet and dry ingredients until just mixed.
  4. Divide batter between prepared pans and bake for about 20 minutes until a toothpick inserted comes out clean.
  5. In a bowl, combine 2 cups of sliced strawberries with strawberry jam and let them sit for about 30 minutes to macerate.
  6. Once cakes are completely cooled, prepare the whipped cream frosting by beating softened cream cheese until smooth, then gradually add powdered sugar and vanilla extract.
  7. In another bowl, whip cold heavy cream until stiff peaks form and gently fold it into the cream cheese mixture until combined.
  8. Place one layer of cake on the serving plate, spread half of the macerated strawberries over it, then top with whipped cream frosting.
  9. Add the second layer of cake on top and spread remaining frosting on top and sides of the cake.
