  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar for the cinnamon swirl
  • 1 tablespoon cinnamon for the cinnamon swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together zucchini, eggs, vegetable oil, Greek yogurt, and vanilla until well combined.
  3. In another bowl, whisk the flour, sugar, baking powder, salt, and spices together.
  4. Gradually combine the dry mixture into the wet ingredients until just mixed—do not overmix.
  5. Prepare the cinnamon-sugar mixture by combining granulated sugar and cinnamon in a small bowl.
  6. Layer half of the batter into the prepared pan followed by half of the cinnamon-sugar mixture. Add the remaining batter and top with the remaining cinnamon-sugar blend; swirl gently to marbelize.
  7. Bake for 60–65 minutes or until golden brown and a toothpick comes out clean from the center.
  8. Let cool for about 15 minutes before slicing.
