  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease a large mixing bowl and add the Rice Krispies Cereal.
  2. In a medium-large saucepan over low heat, melt the butter and vegan marshmallows together until mostly melted. Stir until completely smooth.
  3. Mix in the peppermint extract and green food coloring.
  4. Pour the melted mixture over the cereal and gently toss to coat.
  5. Let cool for about 5-8 minutes, then mix in most of the mini chocolate chips (reserve some for topping).
  6. Press the mixture into a greased 8-inch pan, sprinkle with reserved chocolate chips, and let set at room temperature for at least 30 minutes before cutting into squares.
