  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 12 tbsp cold water (if needed)
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a mixing bowl, combine the flour and powdered sugar, then blend in cold butter until crumbly. Stir in egg yolk and add cold water as needed until dough forms.
  3. Roll out dough to 0.5 cm thickness and cut into circles for mini pie bases.
  4. For the filling, mix diced apple, mixed berries, sugar, lemon juice, cinnamon, and cornstarch in a bowl.
  5. Spoon filling into each crust and optionally create decorative tops with leftover dough.
  6. Bake for 25–30 minutes until golden brown; cool before serving.
