  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ¼ cup fresh herbs (parsley or dill)
  • 1 cup Greek yogurt (plain)

Instructions

  1. Marinate the steak by mixing olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak and let it marinate for at least 30 minutes.
  2. Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill in the fridge.
  3. Heat a skillet over medium-high heat and sear the marinated steak for about 4–5 minutes on each side until cooked to your liking. Let it rest before slicing.
