  • 4 whole fish fillets (snapper or cod)
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • Zest and juice of 1 lemon
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat the fish fillets dry and season with salt, pepper, and oregano.
  4. In a skillet over medium heat, sauté onions until translucent; add bell peppers and zucchini until tender; stir in garlic for one minute.
  5. Spread sautéed vegetables on the bottom of the baking dish and place seasoned fish on top.
  6. Scatter cherry tomatoes, parsley, dill over the fish; drizzle with lemon juice and sprinkle lemon zest.
  7. Cover with foil and bake for 20 minutes; uncover and bake for another 5-10 minutes until fish flakes easily.
