  • 375g cooking apples (e.g., Bramleys)
  • 375g eating apples (e.g., russets)
  • 45g butter (for cooking apples)
  • 60g caster sugar (for cooking apples)
  • 45g plain flour (or cornflour)
  • 500ml whole milk
  • 3 large egg yolks
  • 60g demerara sugar (for topping)
  • ½ teaspoon ground cinnamon

Instructions

  1. Peel and slice both types of apples. In a saucepan over medium heat, melt 45g butter. Add apples and 60g caster sugar, cooking until slightly softened; set aside.
  2. In a mixing bowl, whisk together 45g plain flour and 45g caster sugar. Gradually add 500ml milk while whisking until smooth. In another bowl, beat 3 egg yolks and combine with the milk mixture.
  3. Pour the cooked apple mixture into a baking dish, then pour custard over the apples evenly.
  4. Sprinkle with 60g demerara sugar and dust with ground cinnamon.
  5. Bake at 180°C (350°F) for about 20 minutes until golden brown on top.
