1/4 cup Lemon Juice
3 cloves Garlic
1/2 tsp. Salt
1/4 tsp. Pepper
1 Tbsp. Oregano
1 Tbsp. Red apple vinegar
1 cup Nonfat Plain Greek Yogurt
1 Tbsp. Lemon Juice
1 Tbsp. Garlic
1/2 tsp. Salt
1/4 tsp. Pepper
1 Tbsp. Dill
1/4 cup Olive Oil
1 Cucumber, sliced
1 pint Cherry Tomatoes
1/2 cup Red Onion, thinly sliced
1 Tbsp. Lemon Juice
1/4 cup Olive Oil
1 Tbsp. Red apple vinegar
1 Tbsp. Garlic
1 Tbsp. Oregano
Feta Cheese (optional)
Instructions
In a Ziploc bag, combine Greek yogurt, lemon juice, minced garlic, salt, pepper, oregano, and red apple vinegar. Add cubed chicken breasts and seal the bag. Shake well and let marinate for at least 20 minutes or overnight.
Remove chicken from marinade and cook in a skillet over medium-high heat for 3-4 minutes per side or in an air fryer at 425°F for approximately 11 minutes until cooked through.
In a mixing bowl, combine sliced cucumber, cherry tomatoes, red onion, lemon juice, olive oil, garlic, and oregano. Toss gently.
Whisk together Greek yogurt, lemon juice, minced garlic, salt, pepper, dill, and olive oil in another bowl until smooth.
Layer cooked chicken over cucumber salad in bowls. Top with tzatziki and sprinkle with feta cheese if desired.
