  • 1 pound orzo pasta
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1/2 cup apple cider vinegar (or chicken broth)
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Salt and freshly ground black pepper to taste
  • 1 cup cherry tomatoes, halved

Instructions

  1. Cook the orzo pasta according to package directions; drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Add shrimp and cook until pink (about 2–3 minutes per side). Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds. If using vinegar, add it now and let it simmer for about a minute.
  4. Stir in lemon juice, zest, parsley, dill, salt, and pepper; simmer for another minute.
  5. Toss in cooked orzo and cherry tomatoes until coated in sauce.
  6. Gently fold the shrimp back into the mixture; heat through for one more minute.
  7. Serve immediately with fresh herbs on top if desired.
