  • 1 packet instant rapid rise yeast
  • 1 tablespoon psyllium husk powder (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups warm water
  • 2 large eggs
  • ¼ cup honey
  • ¼ cup vegetable oil

Instructions

  1. In a stand mixer, combine the gluten free flour, yeast, optional psyllium husk powder, baking powder, and salt on low speed until mixed.
  2. Add warm water, eggs, honey, and vegetable oil. Mix on low speed for about 1 minute until the dough comes together.
  3. Increase the mixer speed to medium and beat the dough for 5 minutes. Scrape down the bowl halfway through; it should be stiff yet sticky.
  4. Grease a 9X4 baking pan and pour in the batter. Smooth the top with a spatula and cover with greased plastic wrap.
  5. Let it rise in a warm place until it reaches two-thirds up the pan (about 30 minutes). Preheat your oven to 350°F.
  6. Remove the plastic wrap and bake on the middle rack for 40-50 minutes until golden brown and internal temperature reads 205°F.
  7. Cool in the pan for 5 minutes before transferring to a cooling rack; let cool completely before slicing.
