  • 2/3 cup coconut flour (75g)
  • 2 tbsp psyllium husk powder
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • Generous pinch salt
  • 1 tbsp nigella and/or sesame seeds
  • 1 cup hot water (240ml)
  • 1/4 cup full-fat natural yoghurt (60g)
  • 2 tbsp melted coconut oil or olive oil
  • Handful chopped parsley or coriander/cilantro
  • Generous pinch salt

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. In a mixing bowl, combine coconut flour, psyllium husk powder, xanthan gum, baking powder, and salt. Mix well.
  3. Add hot water, yogurt, and melted coconut or olive oil to the dry mixture. Stir until a cohesive dough forms.
  4. Let the dough rest for a few minutes.
  5. Divide the dough into six equal pieces and roll each between parchment paper to about 1/2 cm thick.
  6. Place the flattened dough on an upturned baking sheet and bake for 12-15 minutes until golden brown.
  7. Brush with melted butter or olive oil and sprinkle with herbs before serving warm.
