  • 1 store-bought cooked rotisserie chicken (chopped)
  • 8 ounces cream cheese
  • 1 ½ cups sharp cheddar cheese (shredded)
  • 2 cups mozzarella cheese (shredded)
  • 1 ½ cups red onion (diced)
  • 8 ounces baby bella mushrooms (sliced)
  • 1 cup heavy cream
  • 1 tablespoon fresh garlic (minced)
  • 1 ½ cups baby spinach
  • ½ cup grated Parmesan cheese
  • ⅓ cup avocado mayonnaise
  • ½ teaspoon hot sauce
  • 1 teaspoon dry mustard
  • ½ teaspoon white pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook chopped turkey bacon until crisp; set aside.
  3. In a saucepan, combine cream cheese, cheddar cheese, mozzarella, heavy cream, garlic, and spices over medium heat until creamy.
  4. Sauté onions and mushrooms in the reserved fat from turkey bacon until soft. Add spinach and cook until wilted.
  5. Combine sautéed vegetables with the creamy cheese mixture and chopped chicken in the skillet.
  6. Transfer everything into a casserole dish and top with remaining mozzarella cheese.
  7. Bake for about 20 minutes or until golden brown.
