  • 2 lb beef chuck stew meat
  • 1 lb celery root
  • 2 medium carrots
  • 1 medium onion
  • 2 cloves garlic
  • 6 cups beef bone broth
  • 14.5 oz can diced tomatoes

Instructions

  1. Season beef with sea salt and black pepper.
  2. In a Dutch oven, heat 1 tbsp olive oil over medium heat. Sear the beef in batches until browned (8-10 mins), then set aside.
  3. In the same pot, add remaining olive oil and sauté onions and carrots for 10 mins until softened.
  4. Add garlic and Italian seasoning; sauté for 1 min.
  5. Return beef to the pot and add broth, diced tomatoes, and bay leaves. Scrape bottom to release browned bits.
  6. Bring to a boil, reduce heat, cover, and simmer for 45-60 mins until tender.
  7. Add cubed celery root; simmer uncovered for an additional 15 mins until tender.
  8. Remove bay leaves before serving; adjust seasoning if needed.
