  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter (for filling, softened)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (for filling, as needed for texture)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually combine with the wet ingredients to form a dough.
  4. Shape the dough into small ovals and press with a fork to create a crosshatch pattern. Sprinkle tops lightly with sugar.
