Scale
  • 2.5 lbs Yukon Gold potatoes
  • 4 tablespoons unsalted butter (or olive oil)
  • 1 large yellow onion
  • 56 cloves garlic
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese
  • Fresh parsley, chives, and thyme

Instructions

  1. Peel and cube the Yukon Gold potatoes into uniform pieces. Rinse under cold water and set aside.
  2. In a large pot over medium heat, melt the butter. Sauté chopped onion for about 5–7 minutes until softened.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in flour to create a roux, cooking for about 1–2 minutes.
  5. Gradually whisk in the broth until smooth; bring to a simmer.
  6. Add the cubed potatoes, cover, and cook for 15–20 minutes until tender.
  7. Blend half of the soup until smooth and return to the pot.
  8. Reduce heat; stir in milk, heavy cream, and fresh herbs, heating gently without boiling.
  9. Remove from heat and add shredded cheddar cheese gradually until melted.
  10. Season to taste with salt and pepper before serving.
