  • 1/4 cup vegetable oil

  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until well combined.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients; stir gently until just combined.
  5. Grease a muffin tin or use muffin liners. Fill each cup two-thirds full with batter.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
