  • 2 tbsp Olive oil
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 tsp Fresh ginger (minced)
  • 1/2 cup Bell peppers (diced)
  • 1 lb Boneless skinless chicken breasts
  • 6 cups Chicken broth, reduced sodium
  • 1 cup Broccoli (cut into florets)
  • 1 cup Cauliflower (cut into florets)
  • 2 tbsp Lemon juice

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  2. Sauté onion, garlic, and ginger for 3–4 minutes until fragrant.
  3. Add bell peppers, Italian seasoning (if desired), red pepper flakes, sea salt, and black pepper; cook for another 3 minutes.
  4. Stir in chicken breasts and chicken broth; bring to a simmer and cook for about 20 minutes.
  5. Remove chicken from the pot, shred it using two forks, and return it to the pot.
  6. Add broccoli and cauliflower; simmer for an additional 10 minutes until veggies are tender.
  7. Stir in lemon juice before serving hot.
