Ingredients

  • Baking spread or butter
  • Caster sugar
  • Eggs
  • Vanilla extract
  • Self-raising flour
  • Black food coloring
  • Butter (for frosting)
  • Icing sugar
  • Green and yellow food coloring
  • Tinned custard (filling)
  • Candy eyes (decoration)

Instructions

  1. Preheat oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with cases.
  2. Beat together baking spread and caster sugar until fluffy. Add eggs one by one, mixing well after each addition. Stir in vanilla extract.
  3. Gradually fold in self-raising flour and black food coloring until smooth.
  4. Divide batter into cases and bake for 25–30 minutes until a skewer comes out clean. Cool completely on a wire rack.
  5. Core each cupcake and fill with lime marmalade mixed with green food coloring.
  6. Make buttercream by mixing softened butter with icing sugar, vanilla extract, milk, and food coloring until bright green.
  7. Pipe the frosting onto cooled cupcakes, then decorate with candy eyes.
