Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cucumber, peeled, seeded, and grated
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 8 large flour tortillas
  • 1 red onion, thinly sliced
  • 1 pint cherry tomatoes, halved

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, oregano, basil, garlic powder, salt, and pepper. Add the chicken strips and toss to coat completely. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours for enhanced flavor.
  2. While the chicken marinates, prepare tzatziki sauce in a medium bowl. Combine grated cucumber, Greek yogurt, minced garlic, fresh dill, salt, and pepper. Stir gently to combine. Adjust seasoning to taste and refrigerate until serving. Allowing it to sit enhances its flavor.
  3. Preheat a large skillet or grill pan over medium-high heat. Remove marinated chicken from the fridge and add it to the hot skillet. Cook while stirring occasionally until cooked through and lightly browned (about 6-8 minutes).
  4. Warm tortillas according to package directions in a dry skillet, microwave, or oven until pliable.
  5. Spread a generous amount of tzatziki sauce onto each tortilla. Top with cooked chicken strips, red onion slices, and halved cherry tomatoes.
  6. Fold tortillas in half or wrap them like burritos based on preference. Serve immediately while warm and enjoy!
