  • 3/4 teaspoon xanthan gum (if not included in the flour blend)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 2/3 cup milk (dairy or non-dairy)
  • 2 eggs or 6 tablespoons aquafaba
  • 2 apples (peeled and diced)
  • Powdered sugar (for glaze)

Instructions

  1. In a large mixing bowl, whisk together the gluten-free flour blend, xanthan gum (if needed), cinnamon, baking powder, and salt.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla until smooth. Fold in the diced apples.
  3. Heat oil in a skillet to 360-375°F (180-190°C). Scoop out tablespoons of batter into the hot oil.
  4. Fry each fritter for about 3 minutes per side until golden brown. Transfer to a wire rack.
  5. For the glaze, mix powdered sugar with milk and vanilla; dip cooled fritters into glaze.
