  • 1/4 cup corn starch
  • 11/2 cups granulated sugar
  • 11/2 cups egg whites (approximately 1011 large eggs)
  • 11/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C), adjusting racks to top and lower thirds.
  2. In a bowl, whisk together the gluten free flour blend and cornstarch; set aside.
  3. Create super-fine sugar by blending granulated sugar until finely textured but not powdered.
  4. In a stand mixer, whip egg whites, cream of tartar, and salt until foamy. Add vanilla.
  5. Gradually incorporate the super-fine sugar while mixing until medium peaks form.
  6. Gently fold in the flour mixture in three additions until just combined.
  7. Transfer batter into an ungreased angel food cake pan and smooth the top.
  8. Bake for 45–47 minutes or until golden brown.
  9. Invert the pan immediately after baking and cool completely before releasing.
