  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder
  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cup Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee (adjust as needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder.
  3. In another bowl, cream softened butter with brown sugar and white sugar until light and fluffy.
  4. Mix in an egg, vanilla extract, and molasses until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Scoop tablespoon-sized portions of dough into balls, roll in granulated sugar, and place on prepared baking sheets.
  7. Bake for about 13 minutes until edges are set but centers remain soft.
  8. For the glaze, mix powdered sugar with ground cinnamon and espresso until smooth; drizzle over cooled cookies.
