  • 1 small yellow onion (90g)
  • 3 tbsp all-purpose flour
  • 1/2 tsp salt
  • 3/4 tsp white pepper
  • 1/2 tsp smoked paprika
  • 1 medium egg
  • 1/4 cup cooking oil (for frying)
  • Chives (for garnish)

Instructions

  1. Wash and peel the potatoes; grate them finely using a box grater or food processor.
  2. Squeeze out excess moisture from the grated potatoes using a kitchen towel.
  3. Grate the onion and squeeze out its moisture similarly.
  4. In a bowl, mix grated potatoes, onion, flour, salt, white pepper, smoked paprika, and egg until combined.
  5. Heat oil in a frying pan over medium-high heat.
  6. Scoop about 1/4 cup of batter into the pan and flatten slightly; cook until golden brown (about 3-4 minutes per side).
  7. Drain on a wire rack and season while hot.
  8. Serve warm with sour cream and chives.
